Yesterday was an enchilada day.  I haven’t made TJ a home cooked meal for a while, because I have been gone… so I decided to make a new chicken enchilada recipe with corn tortillas which I have never actually done, I thinks it’s because I actually prefer flour tortillas… but much to my surprise, I really enjoyed the corn tortillas.  The inside consisted of sour cream, green onions, cumin, cayenne, cheddar cheese, and I took he liberty of adding chicken.  For veggies, I did zucchini, summer squash, onions, mushrooms, garlic, and sea salt (which is much healthier than regular salt)… a wonderful addition to chicken enchiladas.
